Zesty marinara-coated zucchini baked with mozzarella cheese in sandwich form - a tasty vegetarian twist on the classic Italian grinder. Prep ahead for quick heating before serving.
Ingredients:
  • 1 tablespoon olive oil
  • 2 cloves garlic, peeled and coarsely chopped
  • 1 pinch crushed red pepper flakes
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon red wine vinegar
  • 1 (14.5 ounce) can diced tomatoes
  • salt and pepper to taste
  • 1 tablespoon butter
  • 2 medium zucchini, cubed
  • 1 pinch red pepper flakes
  • 1.5 cups shredded mozzarella cheese
  • 4 (6 inch) French or Italian sandwich rolls, split
Instructions:
  • Heat olive oil in a saucepan over medium heat. Sauté garlic, basil, and red pepper flakes until fragrant. Add sugar, vinegar, salt, pepper, and tomatoes with their juices. Simmer over low heat for 15 minutes. Puree in a food processor or blender until smooth.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a skillet over medium heat, melt butter. Saute zucchini in the butter until golden and slightly tender. Season with red pepper flakes, salt, and pepper.
  • Fill each sandwich roll generously with the zucchini mixture. Pour approximately 1/4 cup marinara sauce over the zucchini in each roll and sprinkle with a handful of shredded mozzarella. Close the rolls and wrap them individually in aluminum foil.
  • Bake in the preheated oven for 15 minutes until the bread is warm, the rolls are soft, and the cheese is melted.
