Fun and sweet slice with crunchy biscuit base, fluffy marshmallow layer, and colorful sprinkles.
Ingredients:
  • 185g butter, chopped, at room temperature
  • 255g (1 1/4 cups, firmly packed) brown sugar
  • 225g (1 1/2 cups) plain flour
  • 100g white chocolate, melted
  • Sprinkles, to serve
  • 215g (1 cup) caster sugar
  • 9.00 gm gelatine powder
  • 1 egg white
Instructions:
  • Preheat the oven to 180C (160C fan forced) while you prepare a 26 x 16cm slice pan by greasing it and lining it with baking paper, leaving the edges hanging over the sides for easy removal.
  • In a bowl, use electric beaters to whip the butter and sugar until they are light and creamy. Add the eggs one at a time, beating thoroughly after each addition. Incorporate the vanilla. Gradually add the sifted flour and baking powder, gently folding to mix. Spread the batter evenly in the prepared pan and bake for 25 minutes or until it turns firm and golden. Let it cool completely in the pan before serving.
  • In a small saucepan, combine sugar and 125ml (1/2 cup) water. Stir over low heat until sugar dissolves. Increase heat to medium and simmer without stirring for 10 minutes until syrupy.
  • Place 2 tablespoons of water in a small heatproof bowl, sprinkle with gelatine, and stir until combined. Nestle the small bowl inside a larger one, fill the larger bowl halfway with boiling water. Let it sit for 5 minutes, stirring occasionally, until the gelatine dissolves.
  • Once the syrup is almost ready, whip the egg white in a bowl with electric beaters until soft peaks form. While beating, slowly pour in the hot syrup. Mix in the gelatine and vanilla, then beat for 10 minutes until fluffy and cooled. Spread the marshmallow mixture over the cake base and let it set for 1 hour.
  • Gently lift the slice from the pan using the paper. Cut into squares with a large knife dusted with cornflour, cleaning and redusting the knife as needed. Drizzle with melted chocolate, sprinkle with hundreds and thousands, then allow the chocolate to set before cutting into pieces.
