Family recipe best shortbread

Ingredients:
  • 230g butter, softened
  • 90g caster sugar
  • 350g plain flour
  • 55g cornflour
  • 2.00 gm baking powder
  • 1 pinch salt
Instructions:
  • Preheat the oven to 180C, then use an electric mixer to cream the butter and sugar until they're light and pale in color.
  • In a separate bowl, sift together all the dry ingredients. Once the butter and sugar are creamed, gradually add a portion of the sifted dry ingredients to the mixture and gently stir. Keep adding the dry ingredients gradually until a soft dough forms.
  • On a lightly floured sheet of baking paper, shape the dough into a ball (or smaller balls for kids' participation) and flatten to 1-2cm thickness with a rolling pin. Use cookie cutters to cut out your desired shapes, then transfer the shortbread to a lined baking tray. Repeat with remaining dough until all shapes are cut out and placed on the trays.
  • Bake in a moderate oven for 15-20 minutes until slightly golden. The shortbread should remain pale with a hint of gold. Cool on a wire rack before serving.
