Ingredients:
  • 0.25 cup butter, softened
  • 9 tablespoons white sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1.5 cups biscuit baking mix
  • 0.25 cup yellow cornmeal
  • 0.67 cup milk
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing or lining with paper liners.
  • In a large bowl, beat the butter and sugar until fluffy. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
  • Combine baking mix and cornmeal in a separate bowl. Gently mix this into the butter/egg mixture along with the milk, alternating between the dry and wet ingredients. Stir until just combined, then scoop the batter into the muffin cups.
  • Place in a hot oven and bake until golden brown, about 20-30 minutes.
