Prep ahead a flavorful corn bread and spicy pork sausage stuffing for the special occasion.
Ingredients:
  • 1 (8.5 ounce) package corn bread mix
  • 10 slices firm white bread
  • 1 pound bulk spicy pork sausage
  • 2 cups sliced celery
  • 1 large onion, chopped
  • 2 teaspoons dried sage
  • 0.25 cup melted butter
  • 1 (14 ounce) can chicken broth
  • 2 eggs
Instructions:
  • Prepare the cornbread mix as per the package instructions the day before making the stuffing. Once baked, cool the cornbread outside the pan, cover loosely with a cloth, and let it sit overnight to dry out. Tear the cornbread into pieces and leave them out overnight to continue drying.
  • Preheat your oven to 350 degrees F (175 degrees C and grease a 1 1/2-quart baking dish about 30 minutes before serving.
  • In a skillet over medium heat, brown the sausage, breaking it up as it cooks, for 8 to 10 minutes. Add celery and onion, cook until onion is translucent, about 8 minutes. Stir in sage.
  • Roughly tear and crumble the corn bread into a large bowl. Add 1/2-inch pieces of bread and gently mix. Pour in melted butter, stir well, and lightly incorporate the sausage mixture.
  • Combine the chicken broth and eggs, then mix into the cornbread mixture. Transfer the stuffing to a baking dish, cover with foil, and bake in the preheated oven for about 30 minutes until cooked through. Uncover and bake for an additional 10 minutes until the top is lightly browned.
