Fantastic Fennel Bruschetta

Golden brown French bread slices brushed with olive oil, topped with fresh tomato, basil, and fennel seeds for a delightful summer appetizer or light lunch.
Ingredients:
  • 6 large tomatoes, diced
  • 0.5 large sweet Bermuda onion, diced
  • 1.5 tablespoons fennel seed
  • 0.33333334326744 cup minced fresh basil
  • 0.33333334326744 cup extra-virgin olive oil
  • 1 (20 ounce) loaf French bread, sliced 1/2-inch thick
  • 0.25 cup extra-virgin olive oil, for brushing
Instructions:
  • Combine tomatoes, onion, garlic, fennel seed, basil, 1/3 cup of olive oil, salt, and pepper in a bowl. Refrigerate for a minimum of 1 hour to enhance the flavors.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Coat bread slices evenly with olive oil and place on a baking sheet. Toast until golden brown and crunchy, about 3 minutes per side. Spoon tomato mixture on top of the bruschetta and arrange on a platter to serve.
