Grilled potatoes and peppers in seasoned foil packets.
Ingredients:
  • 2 large baking potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 6 button mushrooms, sliced
  • salt and black pepper to taste
  • 1 pinch mixed vegetable flakes, or to taste
  • 1 pinch paprika, or to taste
  • 2 tablespoons reduced fat spread (such as Brummel & Brown®), or to taste
Instructions:
  • Prepare the outdoor grill by preheating it to medium-high heat and lightly oiling the grate.
  • Start by folding two 12x18-inch aluminum foil pieces in half to make two 12x9-inch rectangles. Coat one side of each with cooking spray. Place the potatoes on one foil sheet, overlapping them and leaving a 2-inch border. Add onion, green bell pepper, red bell pepper, and mushrooms. Season with salt, pepper, vegetable flakes, and paprika. Dot with reduced fat spread. Cover with the second foil piece, greased side down. Seal edges by folding, then poke 4 to 6 holes on top for steam to escape.
  • Grill until potatoes are tender, 20 to 30 minutes.
