Curry butter mussels grilled to perfection in foil packets. Perfect appetizer with crusty bread for dunking, followed by a refreshing green salad topped with grilled chicken or shrimp for a fantastic summer meal.
Ingredients:
  • 3 tablespoons butter, softened
  • 2 cloves garlic, pressed
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground cumin
  • 0.125 teaspoon salt
  • 2 pounds mussels, scrubbed and debearded
  • 1 cup chopped red bell pepper
  • 0.25 cup chopped fresh parsley
  • 1 lime, thinly sliced
  • 1 lime, cut into 4 wedges
Instructions:
  • Preheat the outdoor grill to medium-high heat and lightly oil the grate.
  • Combine the butter, garlic, curry powder, cumin, and salt in a small bowl and whisk until well blended.
  • Lay out four large sheets of aluminum foil. Divide the mussels into four equal portions and place each portion on a piece of foil. Spoon the curry mixture over the mussels. Sprinkle red bell pepper and parsley on top of each portion and add lime slices. Wrap each portion tightly in foil.
  • Grill the packets until the mussels open, for 5 to 10 minutes. Remove any unopened mussels.
  • Serve the mussels in individual bowls and top each with a fresh lime wedge for a burst of citrus flavor.
