Grilled mussels with tangy vinaigrette - a unique and delicious dish!
Ingredients:
  • 24 large fresh mussels in shells (2 lb)
  • 1/3 cup olive or vegetable oil
  • 3 tablespoons red wine vinegar or sherry vinegar
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon diced pimientos, drained
  • 1 teaspoon capers, if desired
  • 1/4 teaspoon salt
  • 6 drops red pepper sauce
  • 1 green onion, finely chopped
Instructions:
  • Check for any broken or open mussels that remain unresponsive to tapping and discard them. Scrub the remaining mussels, using a dull paring knife to remove any barnacles. Pull off the beards by tugging them away from the shells.
  • Place the mussels in a large container, cover them with cool water, gently agitate the water with your hand, then drain and repeat the rinsing process until the water runs clear. Drain the mussels.
  • Preheat gas or charcoal grill. Shake remaining ingredients in a tightly covered container. Refrigerate until ready to serve.
  • Grill mussels over medium-high heat until they open, approximately 5 to 7 minutes. Remove the opened mussels as they cook. Discard any unopened mussels. Arrange grilled mussels on a platter and drizzle with oil mixture.
