Impress guests with succulent grilled mussels this summer!
Ingredients:
  • 1kg (about 32) fresh mussels (see note)
  • 250.00 gm water
  • 250.00 ml fresh white breadcrumbs
  • 125.00 ml grated parmesan cheese
  • 62.50 ml flat-leaf parsley leaves, finely chopped
  • 1 small lemon, rind finely grated
  • 20g butter, melted
Instructions:
  • Clean mussels with a brush, remove beards, and place them in a large saucepan with water. Cover and bring to a gentle boil over medium heat. Reduce to medium-low heat and simmer for about 5 minutes until the mussels open. Drain and discard any unopened mussels.
  • Remove top shells from the remaining mussels and discard them. Arrange mussels on shells on a baking tray. Preheat the grill to medium heat.
  • Combine breadcrumbs, cheese, parsley, lemon rind, butter, salt, and pepper in a bowl. Mix thoroughly. Spoon mixture onto mussels and grill for 1 to 2 minutes until topping is crispy and golden. Serve hot.
