Decadent pumpkin bars with luscious cream cheese frosting.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 4 eggs
  • 1.6666666269302 cups white sugar
  • 1 cup canola oil
  • 1 (15 ounce) can pumpkin puree
  • 2 cups shredded carrots
  • 1 cup crushed pineapple
  • 1 (8 ounce) package cream cheese, room temperature
  • 6 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2.5 cups confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour a 10x15 inch baking dish. In a bowl, combine flour, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice, whisking them together.
  • Combine eggs, white sugar, canola oil, and pumpkin puree in a mixing bowl until smooth. Mix in carrots and pineapple, then gently fold in the flour mixture until well combined. Transfer the batter to the prepared baking dish.
  • Bake in the preheated oven for 25 to 30 minutes until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan before cutting into squares.
  • Once the pumpkin bars have cooled, combine cream cheese, butter, vanilla extract, and confectioners' sugar in a bowl. Mix until smooth, then use the frosting to top the cooled bars.
