Easy-to-make French prune flan from Brittany, France.
Ingredients:
  • 9 ounces pitted prunes
  • 1 cup all-purpose flour
  • 0.625 cup white sugar
  • 1 tablespoon vanilla sugar
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 4 eggs
  • 3 cups whole milk
  • 2 tablespoons rum
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and prepare a shallow 2 quart baking dish by greasing it.
  • Simmer pitted prunes in water until tender yet firm, about 10 minutes. Drain and layer in the baking dish.
  • In a large bowl, combine flour, white sugar, vanilla sugar, baking powder, and salt. Add eggs one at a time, beating well. Slowly mix in the milk until combined, then stir in the rum. Pour the batter over the prunes evenly.
  • Preheat the oven and bake for 10 minutes. Lower the temperature, then continue baking until the filling is firm, slightly risen, and browned on top, about 30 minutes. Serve warm or at room temperature.
