Farfalle carbonara

Elevate carbonara with bowtie pasta and fresh peas.
Ingredients:
  • 350g dried farfalle pasta
  • 150g pea
  • 2 middle bacon rashers, thinly sliced
  • 3 spring onions, thinly sliced
  • 3 eggs, lightly whisked
  • 125ml thickened cream
  • 40g parmesan
  • Mixed salad leaves, to serve
  • Shaved parmesan, to serve
Instructions:
  • Boil the pasta in a large saucepan of salted water according to package instructions, tossing in the peas for the last 2 minutes of cooking. Drain and return to the pan.
  • Fry bacon in a skillet over medium heat until crisp, approximately 5 minutes. Add spring onion and mix well.
  • Combine the egg, cream, and parmesan in a bowl, whisking until smooth. Season with salt and pepper to taste.
  • Combine the bacon and egg mixture with the pasta. Toss over low heat for 1 minute until the sauce thickens slightly. Serve with mixed salad leaves and shaved parmesan.
