Elevate your pasta game with this Neil Perry-inspired gourmet dish.
Ingredients:
  • 400g farfalle (bowtie) pasta
  • 200g artichokes marinated in olive oil, roughly chopped, 2 tbsp oil reserved
  • 125g pancetta, roughly chopped
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 tsp dried chilli flakes
  • Zest and juice of 1 lemon
  • 40.00 ml chopped flat-leaf parsley
  • 125.00 ml grated parmesan, plus extra to serve (optional)
Instructions:
  • Boil pasta until perfectly al dente in salted water, then drain and toss with olive oil.
  • Heat the reserved oil in a deep frypan over medium heat. Cook pancetta, stirring occasionally, for 2 minutes until it starts to crisp. Add onion and cook for 1 more minute until softened. Stir in garlic and chilli flakes, cook for 2-3 minutes. Add artichokes, lemon zest, lemon juice, season with salt and pepper, and stir well to combine.
  • Toss the pasta until heated. Mix in the parsley and parmesan. Portion out the pasta into bowls and garnish with extra parmesan, if desired.
