Try this quick and delicious farfelle pasta with haloumi and prawns for dinner tonight!
Ingredients:
  • 350g farfalle pasta (bow-tie pasta)
  • 36.40 gm olive oil
  • 2 zucchinis, cut into 1cm pieces
  • 100g haloumi, thinly sliced, torn
  • 600g (green or cooked) prawns, peeled, cleaned, cut into 1cm pieces
  • 1 bunch rocket, trimmed, roughly chopped
  • 250g grape tomatoes
  • 2 cloves garlic, crushed
  • 1/2 red bird’s-eye chilli, seeded, chopped
  • 0.63 gm ground cumin
  • 20.00 ml red wine vinegar
  • 60ml (1/4 cup) extra virgin olive oil
Instructions:
  • To prepare the tomato dressing, blend together tomatoes, garlic, chili, and cumin until finely chopped. While blending, slowly drizzle in vinegar and oil until well combined and smooth. Add salt and pepper to taste.
  • Boil pasta in a large pot of salted water for 8 minutes until al dente. Drain thoroughly and set aside the pot for later use.
  • Heat oil in a frying pan over medium heat. Sauté zucchinis until golden, then stir in haloumi until light golden. Finally, add prawns and cook until just cooked or warmed through. Enjoy!
  • Heat the reserved pan over medium heat. Add pasta, prawn mixture, and dressing, then toss everything together until well combined. Take off the heat.
  • Mix in arugula and gently mix all ingredients. Portion into bowls and present.
