Turn your farmer's market finds into a delicious chicken and cheese veggie medley in no time.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 ears corn, kernels cut from cob
  • 1 large zucchini, chopped
  • 0.5 cup chopped cooked chicken
  • 0.25 cup chopped fresh parsley
  • 0.25 cup shredded Colby-Monterey Jack cheese, divided
  • salt and ground black pepper to taste
Instructions:
  • In a large skillet over medium heat, warm olive oil. Sauté onion and red pepper until soft, approximately 3 minutes. Add corn, zucchini, and chicken to the skillet and cook until vegetables are crisp-tender, about 5 minutes. Remove from heat.
  • Sprinkle parsley and half of the cheese over the vegetables, toss to mix, then season with salt and pepper. Transfer to a serving dish and top with the rest of the cheese.
