Summer Beet and Dill Salad: Boiled beets marinated in sweet vinaigrette with fresh dill, perfect for farmer's market finds.
Ingredients:
  • 1 bunch beets, trimmed, leaving 1 inch of stems attached
  • 0.5 cup distilled white vinegar
  • 0.25 cup white sugar
  • 1 tablespoon chopped fresh dill
  • 0.25 teaspoon ground allspice
Instructions:
  • - In a large pot, place the beets and cover with salted water. Boil until tender when pierced with a fork (20-30 minutes). Drain and let cool. Meanwhile, whisk vinegar and sugar until sugar dissolves; set aside.
  • Peel the beets once they have cooled slightly and cut off the tops. Chop the beets into cubes or wedges and combine them with the vinegar mixture. Season with dill, clove, and allspice, then toss to coat evenly. Cover the bowl and chill in the refrigerator overnight before serving.
