"Farmers' Market-inspired quesadillas: Delicious, easy appetizer or meal using fresh, simple ingredients."
Ingredients:
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped zucchini
  • 0.5 cup chopped yellow squash
  • 0.5 cup chopped red onion
  • 0.5 cup chopped mushrooms
  • 1 tablespoon olive oil
  • cooking spray
  • 6 (9 inch) whole wheat tortillas
  • 1.25 cups shredded reduced-fat sharp Cheddar cheese
Instructions:
  • Sauté red pepper, zucchini, yellow squash, onion, and mushrooms in olive oil in a large nonstick pan over medium to medium-high heat for approximately 7 minutes, until vegetables are tender. Transfer cooked vegetables from the pan.
  • Spray the pan with cooking spray and lay down one tortilla. Sprinkle 1/4 cup of cheese on top, followed by 3/4 cup of mixed vegetables. Add 1/8 cup of cheese on the veggies and cover with another tortilla. Cook until golden on each side for 2 to 3 minutes. Take the quesadilla out, slice into 8 triangles, and serve hot. Repeat with the rest of the ingredients.
