Whip up Chef John's versatile farmer cheese dumplings - perfect in any sauce!
Ingredients:
  • 3 tablespoons unsalted butter
  • 0.5 pound skinless, boneless chicken thighs, cubed
  • 1 yellow onion, diced
  • 0.3333 cup flour
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 6 cups chicken broth
  • 2 celery, diced
  • 1 large carrot, diced
  • 0.5 teaspoon fresh thyme leaves
  • 2 tablespoons sliced green onions
  • 0.5 cup farmer's cheese
  • 1 large egg
  • 1.25 teaspoons minced fresh rosemary
  • 0.5 teaspoon kosher salt, or to taste
  • 1 pinch freshly ground black pepper
  • 0.333 cup self-rising flour
Instructions:
  • Prepare all the ingredients.
  • In a large saucepan over medium-high heat, melt the butter. Sear the chicken thighs until lightly browned, approximately 5 minutes. Add the onion and cook until soft and translucent, about 5 minutes. Season with salt, pepper, and cayenne. Stir in the flour until well combined to create a roux, cooking for 2 to 3 minutes. Adjust flour amount to thicken stew to your liking.
  • Deglaze the pan by adding chicken broth and scraping up the flavorful browned bits. Introduce carrots and celery to the mixture and bring it to a gentle simmer. Keep the heat at medium-low to maintain a steady simmer. Stir in thyme leaves and simmer until the gravy slightly reduces and thickens, approximately 45 minutes.
  • While you wait, prepare the dumplings by combining farmer's cheese, egg, rosemary, salt, and pepper in a bowl. Mix until smooth using a spoon. Then, add self-rising flour and mix until a very stiff batter is formed.
  • Increase the heat to medium and gently simmer the gravy until it steadies. Stir in the green onions.
  • Using one heaping tablespoon of dumpling batter at a time, shape the batter with another tablespoon into oval dumplings. Carefully place the dumplings into the simmering liquid, making a total of 6 dumplings. Sprinkle with cayenne pepper, cover, and lower the heat to medium-low.
  • Allow dumplings to gently simmer and steam until they puffed up and fully cooked without stirring or peaking, approximately 15 minutes. Taste and adjust seasoning with salt if needed.
