Quinoa with tomato, onion, garlic sauce and farmer's cheese is a tasty and healthy dish.
Ingredients:
  • 1 cup quinoa, well rinsed
  • 2 cups water
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 1 cup chopped onions
  • 1 teaspoon minced garlic
  • 1 large fresh tomato, cored, chopped (about 1 1/4 cups)
  • 1 roasted, peeled, seeded, and chopped large green chile, either Anaheim or Poblano (optional)*
  • 2 teaspoons tomato paste
  • Salt
  • Freshly ground black pepper
  • 1/4 teaspoon of dried oregano (or 1/2 teaspoon fresh, finely chopped)
  • 1/4 pound (4 ounces) fresh farmer's cheese, or queso fresco, cut into small cubes
  • 1 cup milk
  • Fresh basil, cilantro, or chives for garnish (optional)
Instructions:
  • Prepare perfectly fluffy quinoa: In a medium pot, combine 1 cup of quinoa and 2 cups of water. Bring to a boil, then lower the heat to a gentle simmer. Cover the pot and cook for 10 minutes. Once done, let it rest off the heat for another 10 minutes.
  • Prepare the sauce: While the quinoa cooks, in a medium skillet over medium heat, heat olive oil and butter. Sauté onions for a couple of minutes, then add garlic and cook for another minute. Stir in chopped tomato, 1/2 teaspoon salt, dried oregano, and tomato paste. If desired, add cooked chopped green chiles. Season with freshly ground black pepper and stir well. Simmer until the tomatoes break down and the sauce thickens slightly. Finally, mix in the cheese, adjust seasoning with salt and pepper to taste.
  • Combine the milk with the cooked quinoa, then serve in bowls topped with sauce and garnish with your choice of chopped herbs.
