Farro, lentil and goat's cheese salad with avocado dressing

Try a healthy and delicious farro, lentil, and goat cheese salad with added grains for a fantastic texture.
Ingredients:
  • 200g farro
  • 200g lentils
  • 1/2 avocado
  • 140g yoghurt
  • 120g sour cream
  • Zest and juice of 1 lemon
  • 18.20 gm extra virgin olive oil
  • 100g almond
  • Handful wild rocket leaves
  • 300g goat's cheese, crumbled
  • 1 bunch chives, chopped
  • Extra lemon wedges, to serve
Instructions:
  • In a saucepan over medium heat, simmer the farro in cold water until tender, about 15-20 minutes. Drain and rinse with cold water.
  • Simmer lentils in a pot of boiling water on medium-high heat for 15 minutes, or until tender. Drain and rinse with cold water.
  • Combine the avocado, yogurt, sour cream, lemon zest, and juice in a food processor. Blend until creamy. Season with a touch of salt and a generous amount of freshly ground black pepper.
  • Combine farro, lentils, and oil in a bowl. Season well and toss to mix. Transfer to a serving dish and top with almonds, rocket, goat’s cheese, and chives. Lightly toss everything together. Serve with avocado dressing and lemon wedges.
