Delightful vegan Indian farro dish with lentils, carrots, celery, onion, and garam masala.
Ingredients:
  • 1 teaspoon salt
  • 2 carrots, finely chopped
  • 2 stalks celery, finely chopped
  • 1 small onion, finely chopped
  • 1 tablespoon garam masala
  • 4 cups vegetable broth, or more to taste
  • 0.5 cup semi-pearled farro
  • 1 cup red lentils
Instructions:
  • Season diced carrots, celery, and onion with salt. Heat 1 tablespoon oil in a large soup pot over medium heat. Sauté vegetables until onion is translucent, approximately 5 minutes. Create a space in the center of the pot and add another tablespoon of oil. Sprinkle in garam masala and toast for 1 to 2 minutes, then mix evenly with the vegetables.
  • 1. In a pot, pour in vegetable broth and bring it to a boil. 2. Lower the heat to medium-low, add farro, cover, and simmer for approximately 20 minutes until almost tender. 3. Incorporate lentils, cover, and simmer for another 20 minutes, adding additional broth if necessary, until both farro and lentils are tender but still retain their shape. 4. Season the dish with salt to taste before serving.
