Cherry Farro Salad with Sweet Vinaigrette

Cherry and farro salad with walnuts tossed in sweet vinaigrette - a refreshing and hearty dish.
Ingredients:
  • 0.25 cup extra-virgin olive oil
  • 0.25 cup pure maple syrup
  • 0.25 cup apple cider vinegar
  • 2 teaspoons white sugar
  • 0.25 cup chopped walnuts
  • 2.5 cups chicken broth or vegetable broth
  • 1 cup farro
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 1 cup chopped tart green apple
  • 0.75 cup dried cherries
  • 2 tablespoons chopped flat-leaf parsley
Instructions:
  • Combine oil, maple syrup, vinegar, sugar, and salt in a bowl and whisk until the dressing is smooth.
  • Toast and stir walnuts in a small skillet over low heat until golden and aromatic, for about 3 to 4 minutes.
  • In a saucepan, combine chicken broth, farro, oregano, and basil. Bring to a boil, then simmer over medium-low heat for 10 minutes. Remove from heat, cover, and rest until liquid is fully absorbed, around 30 minutes. Transfer the farro to a bowl and allow it to cool to room temperature for another 30 minutes.
  • Combine walnuts, green apples, dried cherries, and parsley with farro. Drizzle dressing over the mixture and toss to coat. Chill in the refrigerator for at least 30 minutes before serving.
