Vibrant farro salad with parsley, zesty lemon, sweet cherry tomatoes, and hearty great northern beans.
Ingredients:
  • 2 cups water
  • 1 cup pearled farro
  • 12 ounces canned great northern beans, drained
  • 0.5 cup halved cherry tomatoes
  • 0.25 cup freshly chopped parsley
  • 0.25 cup freshly grated Parmesan cheese
  • 1 teaspoon lemon juice
  • salt and freshly ground black pepper to taste
Instructions:
  • In a saucepan, bring water to a boil. Stir in farro, then reduce heat, cover, and simmer for up to 40 minutes or until farro is tender and liquid is absorbed.
  • Gently combine cooked farro, great northern beans, cherry tomatoes, parsley, Parmesan cheese, lemon juice, salt, and black pepper in a bowl.
