Savory black bean soup with hearty ham chunks, topped with gooey Cheddar and tangy sour cream.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 large carrot, peeled and thinly sliced
  • 3 cloves garlic, minced
  • 2 (15 ounce) cans black beans
  • 1 (14 ounce) can chicken broth
  • 2 cups cubed cooked ham
  • 0.25 teaspoon cumin
  • ground black pepper to taste
  • 1 cup shredded Cheddar cheese
  • 1 cup sour cream
Instructions:
  • In a large pot over medium heat, sauté onion, bell pepper, carrot, and garlic in oil until tender, about 5 minutes. Stir in half of the black beans, followed by the chicken broth.
  • Blend the rest of the beans until creamy. Add to the pot and bring the soup to a boil. Lower the heat, then stir in ham, salt, cumin, and pepper. Let it simmer for 20 minutes. Top with Cheddar cheese and sour cream before serving.
