Whip up a quick and delicious beef stir fry with black beans for a satisfying dinner.
Ingredients:
  • 62.50 ml black bean garlic sauce
  • 1.25 gm arrowroot
  • 450g beef rump steak, thinly sliced across the grain
  • 1 brown onion, halved, sliced
  • 1 green capsicum, sliced
  • 100g beansprouts, trimmed
  • 400.00 gm steamed rice or special fried rice (see related recipe), to serve
Instructions:
  • Create a creamy paste by mixing black bean sauce, arrowroot, and 1 tablespoon of cold water.
  • Preheat a large wok over high heat until smoking. Add 2 teaspoons of oil and swirl to coat the wok. Stir-fry one-third of the beef for 1 minute until sealed, then transfer to a plate. Repeat with the remaining beef in 2 batches using more oil each time.
  • Heat the remaining oil in the wok and sauté the onion for 1 minute. Toss in the capsicum and stir-fry for an additional 30 seconds. Add the beef back to the wok along with its juices and stir in the black bean mixture. Cook for 1 minute until the sauce slightly thickens. Take the wok off the heat, mix in the beansprouts, and gently combine. Serve the flavorful dish over rice.
