Simple and flavorful chicken dish, ready in no time!
Ingredients:
  • 1kg chicken thigh fillets, halved
  • 30.00 gm chermoula spice mix or paste (see note)
  • 1 onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 lemon, thinly sliced
  • 100g blanched almonds
  • 140g green olives
  • 250ml chicken stock
  • Couscous, to serve
  • Chopped coriander, to serve
Instructions:
  • Coat chicken with half of the spice mix. Heat oil in a large pan over medium heat and sauté onion and garlic until softened, about 2-3 minutes. Remove and set aside.
  • Sear chicken until golden on both sides over medium-high heat. Stir in lemon, nuts, olives, stock, and rest of the spices. Bring to a boil, then cover, reduce heat to low, and simmer for 20 minutes until chicken is cooked through. Serve with couscous and fresh coriander.
