The Fast 800 chicken zoodle stir-fry recipe

Try this delicious low-carb dish for a healthy and satisfying meal, ideal for weight loss goals or The Fast 800 diet.
Ingredients:
  • 10g miso paste (genmai)
  • 1 tsp apple cider vinegar
  • 20.00 gm water
  • 100g skinless chicken breast, cubed
  • 1 garlic clove, minced
  • 1cm root ginger, grated
  • 20.00 ml sesame oil
  • 100g button mushrooms, sliced
  • 1 pak choy, roughly chopped
  • 1 zucchini, spiralised
  • 10g cashews, roughly chopped
Instructions:
  • Prepare the dressing by combining miso, apple cider vinegar, and water in a bowl, then set it aside.
  • Heat half of the sesame oil in a wok or frypan. Add the chicken, garlic, and ginger, and cook until browned and almost cooked through. Remove the ingredients from the pan.
  • Sauté mushrooms and bok choy in the pan with the remaining oil. Return chicken to the pan, pour in miso mixture, and heat through.
  • For warm zoodles, toss spiralized zucchini in the pan until heated. Sprinkle with chopped cashews. If preferred raw, arrange zoodles on a plate, then top with stir fry and cashews.
