Versatile low-calorie Mexican egg dish ideal for any meal, compliant with The Fast 800 diet.
Ingredients:
  • 2 large free range eggs
  • 4.60 gm extra virgin olive oil
  • 20.00 ml drained pickled jalapeno peppers, chopped
  • 30g spinach leaves
  • 10g parmesan cheese, grated
Instructions:
  • Combine eggs in a bowl, whisk with a splash of water, and season with black pepper. Stir until well mixed.
  • Heat oil in a non-stick pan over medium heat. Pour in the egg mixture, making sure to cover the entire pan base. Let it sit for 1 minute, then gently use a spatula to lift the egg from the edges, allowing the uncooked egg to flow to the edge of the pan (tilt the pan if needed).
  • Once small bubbles form around the edges of the mixture and the top looks cooked, delicately place the jalapenos and spinach on one side of the omelette, and generously sprinkle with cheese.
  • Fold the untopped side of the omelette over. Cook for an additional minute. Flip or slide onto a plate and serve promptly.
