Whip up a quick and delicious salmon, dill, and potato frittata in just 30 minutes!
Ingredients:
  • 2 brushed potatoes, peeled, thinly sliced
  • 8 Free Range Eggs
  • 185ml thickened cream
  • 40.00 ml chopped dill
  • 185g pkt Hot Smoked Salmon Fillets, skin removed, coarsely flaked
  • 120g pea
Instructions:
  • Preheat the grill to medium heat and grease a 20cm non-stick frying pan. Cook half of the potatoes for 2 minutes on each side until golden and tender. Transfer to a plate and repeat with the remaining potatoes.
  • Combine eggs, cream, and dill in a large jug. Season to taste.
  • Layer half of the potatoes, salmon, and peas in the frying pan. Repeat with the remaining ingredients. Pour in the egg mixture. Cook for 5 minutes until almost set. Finish by grilling for 3 minutes until golden brown and fully set.
  • Slice the frittata into wedges and enjoy warm or at room temperature.
