Ingredients:
  • 250g packet jasmine microwave rice
  • 400g can tuna in brine, drained, flaked
  • 3 green onions, trimmed, finely sliced
  • 2 eggs, lightly beaten
  • 125.00 ml dried breadcrumbs
  • 57.50 gm vegetable oil
  • 81.68 gm whole-egg mayonnaise
  • 22.00 gm sweet chilli sauce salad leaves, to serve
Instructions:
  • Prepare the rice as directed on the packet. Then, transfer it to a bowl to cool slightly before adding the tuna, onions, and eggs. Mix everything together until well combined.
  • Shape mixture into 8 balls and gently press to flatten. Coat patties in breadcrumbs by rolling them in a shallow bowl. Heat oil in a pan over medium heat. Cook half the patties for 2 to 3 minutes per side until golden brown. Drain on paper towel and repeat with the remaining patties.
  • Mix together creamy mayonnaise and tangy sweet chili sauce in a small bowl. Serve the savory patties accompanied by the delightful mayonnaise mixture and crisp salad leaves.
