Ingredients:
  • 1 baby cos lettuce, leaves torn
  • 200g red grape tomatoes, halved
  • 1 small red onion, halved, thinly sliced
  • 1 Lebanese cucumber, cut into 2cm cubes
  • 1 green capsicum, cut into 2cm cubes
  • 165.00 ml feta
  • 165.00 ml pitted kalamata olives
  • 40.00 ml chopped fresh oregano
  • 2 x 185g cans tuna in oil
  • 62.50 ml red wine vinegar
  • crusty bread, to serve
Instructions:
  • Combine the fresh lettuce, ripe tomatoes, crunchy onion, crisp cucumber, vibrant capsicum, tangy feta, flavorful olives, and aromatic oregano in a spacious bowl.
  • Combine undrained tuna with a drizzle of vinegar and season with pepper. Gently toss to mix well and serve.
