Mediterranean Tuna Salad

Transport your taste buds to Greece in just 15 minutes with fresh tuna-stuffed tomatoes.
Ingredients:
  • 5 large tomatoes
  • 2 cans (4.5 oz each) light tuna in olive oil, undrained
  • 1 can (15.5 oz) great northern beans, drained, rinsed
  • 1/4 cup chopped fresh Italian (flat-leaf) parsley
  • 2 tablespoons capers, drained
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons finely chopped garlic
  • 5 sprigs fresh Italian (flat-leaf) parsley, if desired
Instructions:
  • Trim a thin slice from the bottom of each tomato to help them stand upright. Then, carefully trim a thin slice from the top of each tomato and scoop out the flesh, leaving just the tomato shell. Next, remove the seeds from the tomato flesh and finely chop enough to make 1 cup.
  • Combine the chopped tomato, tuna, beans, parsley, capers, lemon juice, garlic, salt, and pepper in a medium bowl.
  • Fill the tomatoes with the tuna mixture and top with fresh parsley sprigs for a beautiful presentation.
