Simple, flavorful dish ideal for a speedy weeknight meal.
Ingredients:
  • 375g fettuccine
  • 425g can tuna in oil
  • 1 medium red onion, finely chopped
  • 40.00 ml roughly chopped drained capers
  • 400g can diced Italian tomatoes with sliced olives (see note)
  • 250.00 ml torn basil leaves
  • Shaved parmesan, to serve
Instructions:
  • Boil pasta in salted water according to package instructions until tender. Drain and return to the pan.
  • Drain tuna, saving 2 tablespoons of oil. Heat the reserved oil in a non-stick pan over medium heat. Sauté onion and garlic for 3 to 4 minutes until onion is soft.
  • Add capers, tomato, and 1/2 cup cold water to the mixture. Bring to a gentle simmer. Cook for 10 to 12 minutes until the sauce thickens.
  • Flake tuna with a fork. Combine tuna, tomato mixture, and basil with pasta. Gently toss over low heat for 1 to 2 minutes, until heated through. Divide into bowls and serve with Parmesan.
