Creamy seafood pie with mashed potato topping; a comforting dish for seafood lovers.
Ingredients:
  • 2.5 pounds potatoes
  • 2 bay leaves, divided
  • 28 fluid ounces milk, divided, or more if needed
  • 0.5 cup butter, divided
  • 1 tablespoon olive oil
  • 8 ounces skinless haddock
  • 8 ounces skinless salmon
  • 8 ounces skinless smoked fish
  • 0.33333334326744 cup all-purpose flour
  • 1 leek, sliced
  • 2 tablespoons chopped fresh parsley, or more to taste
  • 2 scallions, chopped
  • 1 teaspoon spicy mustard
  • 8 ounces cooked shrimp, peeled and deveined
Instructions:
  • In a large pot, combine potatoes with a bay leaf, salt, and pepper, cover with water, and bring to a boil. Simmer over medium-low heat until tender, approximately 20 minutes. Drain excess water and return potatoes to the pot. Mash potatoes with milk and butter until smooth.
  • Preheat your oven to a gentle 200 degrees F (95 degrees C) while generously coating the bottom of a 12-inch square baking dish with olive oil.
  • In a large, deep saucepan, bring 20 ounces of milk and 1 bay leaf to a simmer. Poach haddock, salmon, and smoked fish in batches for about 5 minutes until easily flaked with a fork. Separate fish into chunks on a work surface. Arrange fish and shrimp in the baking dish, reserving the flavored milk for later.
  • Measure the cooking liquid from the fish in a measuring cup, adjusting as necessary to reach 2 1/2 cups.
  • In the same large saucepan, melt the remaining butter over low heat. Whisk in the flour until smooth. Stir in the 2 1/2 cups milk, leek, parsley, scallions, and mustard. Simmer for about 5 minutes until thickened. Pour this mixture over fish and shrimp, then top with mashed potatoes, spreading them evenly.
  • Bake until bubbly around the edges and lightly golden brown, for 30 to 45 minutes in the preheated oven.
