Feel good chicken broth

Revitalize with a comforting twist on classic chicken soup for the man flu blues.
Ingredients:
  • 1.5 kg higher-welfare chicken
  • 2 carrots peeled and roughly chopped
  • 2 sticks celery roughly chopped
  • 1 rasher higher-welfare smoked bacon
  • 2-3 sprigs fresh rosemary
  • 1 handful shiitake mushrooms
  • 1 splash sherry or port optional
  • sea salt
  • extra virgin olive oil
Instructions:
  • Combine chicken, carrot, celery, and bacon in a large saucepan, cover with water, and bring to a boil. Reduce heat and simmer gently for 1 hour and 15 minutes, skimming any residue that rises to the top. Add rosemary sprigs, shitake mushrooms, and sherry (if using) for the last 10 minutes, then remove the chicken. Season the soup with salt, strain it into bowls without disturbing too much for clarity. Add chicken slivers and mushrooms to each bowl, finish with a drizzle of extra virgin olive oil. Enjoy a beautifully clear consommé.
