Make-ahead fennel slaw with tangy seasoned rice vinegar dressing. Flavorful and refreshing!
Ingredients:
  • 4 cups fennel bulb, very thinly sliced
  • 3 cups radicchio, very thinly sliced
  • 1 lightly packed tablespoon fresh dill, chopped
  • 1/4 cup plus 1 tablespoon seasoned rice vinegar
  • 1/3 cup neutral oil, such as avocado or grapeseed oil
  • 3/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
Instructions:
  • Mix it up: Combine fennel, radicchio, dill, vinegar, oil, salt, and black pepper in a large bowl and toss well.
  • Let the flavors blend: Chill in the refrigerator for 30 to 60 minutes to enhance the fennel and radicchio with the dressing. Toss gently before enjoying.
