Fennel and radicchio salad

Vibrant Italian fennel and radicchio salad - simply delicious!
Ingredients:
  • 2 baby fennel bulbs, ends trimmed reserving fronds
  • 80ml (1/3 cup) fresh orange juice
  • 45.50 gm extra virgin olive oil
  • 5.90 gm Dijon mustard (see note)
  • 1 small radicchio lettuce, leaves separated, torn
  • 1 baby cos lettuce, leaves separated
  • 70g baby rocket leaves
Instructions:
  • Finely chop 1 tablespoon of the reserved fennel fronds and place them in a screw-top jar. Add the orange juice, oil, mustard, salt, and pepper. Shake vigorously until fully combined.
  • Slice the fennel thinly. Combine fennel, radicchio, lettuce, arugula, and dressing in a serving dish, tossing well to combine.
