Whip up a refreshing winter salad with fennel, beans, and radicchio for a burst of flavors.
Ingredients:
  • 1 radicchio lettuce, trimmed, leaves torn
  • 2 baby fennel bulbs, trimmed, thinly sliced
  • 400g can borlotti beans, drained, rinsed
  • 1 small red onion, halved, thinly sliced
  • 42.00 gm lemon juice
  • 18.20 gm olive oil
  • 62.50 ml small fresh basil leaves
Instructions:
  • In a bowl, combine radicchio, fennel, beans, onion, lemon juice, oil, and basil leaves. Season with salt and pepper, then toss to mix. Serve.
