"Smoked salmon on fennel bed with cherry tomato salad."
Ingredients:
  • 2 cups wood chips
  • 1 bulb fennel, trimmed and very thinly sliced
  • 2 (7 ounce) salmon fillets
  • salt and ground black pepper to taste
  • 1 cup quartered cherry tomatoes
  • 3 tablespoons olive oil
  • 1 lemon, juiced
  • 2 tablespoons fennel fronds and threads
  • 1 pinch white sugar
Instructions:
  • Place wood chips in a bowl and cover with cold water, allowing them to soak for a minimum of 1 hour to enhance flavor.
  • Preheat the outdoor charcoal grill to medium heat and lightly oil the grate. Add wood chips over the coals, cover the grill, and wait for smoke to appear. Once smoke is visible, close the vents, open the grill, and lay fennel slices on the grates to form a bed.
  • Season salmon with a generous amount of salt and black pepper. Lay salmon on fennel slices and grill with lid closed until salmon is tender and flakes easily, 15 to 20 minutes. Let salmon rest for 5 minutes, then top with grilled fennel before serving, if desired.
  • Mix together the tomatoes, olive oil, lemon juice, fennel fronds, sugar, salt, and black pepper in a bowl. Drizzle the flavorful tomato mixture over the salmon before serving.
