Smoked salmon platter

Impress with a simple yet elegant smoked salmon platter.
Ingredients:
  • 117.50 gm sour cream
  • 2 tsp finely grated lemon rind
  • 42.00 gm lemon juice
  • 40.00 ml small fresh dill sprigs
  • 1 small red onion, thinly sliced
  • 1 baby fennel bulb, trimmed, very thinly sliced
  • 100g snow pea sprouts, trimmed
  • 9.20 gm olive oil
  • 300g sliced smoked salmon
  • 2 tsp drained baby capers
  • Kurrajong Kitchens bite size lavosh crackers, to serve
Instructions:
  • In a bowl, mix together sour cream, lemon zest, lemon juice, and half of the dill. Add salt and pepper to taste. Garnish with the remaining dill.
  • In a bowl, combine onion, fennel, and sprouts. Drizzle with oil and toss until coated. Arrange the fennel mixture on a platter, top with smoked salmon, sprinkle with capers, and serve with sour cream and crackers.
