Feta, tomato and artichoke salad

Quick and delicious side salad.
Ingredients:
  • 3 small (about 90g each) ripe tomatoes, halved, deseeded, coarsely chopped
  • 1 x 170g jar marinated artichoke hearts, drained reserving 2 tsp of marinade, quartered
  • 150g low-fat feta, cut into 1cm pieces
  • 62.50 ml loosely packed fresh continental parsley
  • Salt
  • Freshly ground black pepper
Instructions:
  • In a serving bowl, mix together the tomato, artichoke, feta, parsley, and reserved artichoke marinade. Season with salt and pepper, then gently toss to combine. Serve promptly.
