Moist and tender chicken breasts marinated in tangy feta brine for unbeatable flavor and juiciness.
Ingredients:
  • 4 skinless, boneless chicken breasts
  • 2 sprigs fresh oregano
  • 1 sprig fresh rosemary
  • 2 ounces feta cheese in brine, with 2 ounces of brine reserved
  • 1 cup water
  • 1 clove garlic
  • 4 slices lemon
Instructions:
  • Flatten chicken to a uniform 1-inch thickness and transfer to a large resealable bag.
  • Gently bruise oregano and rosemary sprigs with the back of a knife or a meat mallet, keeping them whole, then layer on top of the chicken.
  • In a blender, blend feta cheese, reserved brine, water, and garlic until smooth. Pour the mixture over the chicken in a bag, seal it, and refrigerate for 8 hours to overnight.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • After taking the chicken out of the brine, gently pat it dry. Brush it with fragrant olive oil and nestle it into a spacious baking dish. Season with a sprinkle of black pepper and crown each breast with a zesty lemon slice.
  • Roast in the preheated oven until chicken is cooked through and thermometer reads 165°F (74°C), about 22-25 minutes.
