Feta and mint dip

Creamy, sensational dip.
Ingredients:
  • 200g feta, drained, crumbled
  • 86.63 gm lemon juice
  • 18.20 gm olive oil
  • 20.00 ml finely chopped dill
  • 20.00 ml finely chopped mint
  • 1/2 small Spanish onion, finely chopped
  • Extra virgin olive oil
  • Cucumber sticks, to serve
Instructions:
  • In a large bowl, blend feta cheese, lemon juice, and olive oil. Mash with a potato masher until creamy. Add dill and mint, and mix well.
  • Transfer the mixture to a bowl, smoothing the surface. Sprinkle with onion and drizzle with extra virgin olive oil before serving alongside cucumber.
