Fetta, thyme and honey loaded loaf

Delicious Fetta, Thyme, and Honey Loaf - a hit for all ages!
Ingredients:
  • 520g day-old sourdough loaf
  • 75g butter, softened
  • 2 tsp chopped fresh thyme leaves
  • 180g tub Persian fetta in oil, drained, crumbled
  • 250.00 ml grated colby cheese
  • 1.50 gm sesame seeds
  • 40.00 ml roughly torn fresh curly parsley leaves
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and line a large baking tray with baking paper.
  • Slice the whole loaf diagonally into 3cm-thick slices without cutting all the way through. Then, make additional cuts in the opposite direction to form diamond shapes.
  • Mix butter, thyme, and garlic in a small bowl. Season with salt and pepper. Place loaf on prepared tray. Spread mixture between cuts in bread. Push fetta and half of the colby cheese into cuts. Sprinkle with remaining colby and sesame seeds. Bake until golden and crunchy with melted cheese, about 10-15 minutes. Let it rest for 2 minutes before serving.
  • Drizzle the loaf generously with honey and sprinkle with freshly chopped parsley before serving promptly.
