Try a healthy mushroom and feta cheese side dish to elevate your roast dinner.
Ingredients:
  • 400g button mushrooms
  • 200g Swiss brown mushrooms, halved
  • 2 garlic cloves, thinly sliced
  • 20.00 ml fresh thyme leaves
  • 50g low-fat feta, crumbled
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. In a large baking dish, combine mushrooms, garlic, and thyme. Drizzle with oil and toss well.
  • Bake mushrooms for 20 to 25 minutes, stirring halfway through, until tender and browned. Season with salt and pepper, then top with feta before serving.
