Fetta fennel and dill salad

Mediterranean-inspired salad with fresh herbs, fennel, lemon, pomegranate, and creamy feta.
Ingredients:
  • Juice of 1 lemon
  • 500ml water
  • 2 small fennel heads
  • 2 small green pears
  • 1 handful dill, roughly chopped
  • 85g Crumbled Fetta with Mediterranean Herbs
  • 100g pomegranate seeds
  • 2 tsp pomegranate molasses
  • Salt and pepper to taste
Instructions:
  • In a large bowl, combine lemon juice and water. Use a mandolin to thinly slice the fennel and pears, discarding the cores and seeds. Carefully toss to ensure the lemon water coats the slices and prevents browning.
  • Prepare the dressing by whisking together olive oil, lemon juice, pomegranate molasses, and seasonings in a small bowl.
  • After draining the lemon water from the slices, mix in the dill gently. Place the slices on a serving platter, then sprinkle with Mil Lel Crumbled Fetta with Mediterranean Herbs, fresh pomegranate seeds, and a drizzle of dressing. Serve promptly.
