Spicy bacon and tomato pasta that will leave you feeling happy, not angry.
Ingredients:
  • 1 small brown onion, coarsely chopped
  • 9.20 gm olive oil
  • 1 garlic clove, crushed
  • 1 fresh red chilli, finely chopped
  • 6 rashers rindless bacon, coarsely chopped
  • 2 x 400g cans diced tomatoes
  • 2 x 375g pkts Fresh Egg Fettuccine
  • Fresh basil leaves, to serve
Instructions:
  • In a saucepan over medium heat, sizzle the oil, onion, garlic, chilli, and bacon together, stirring frequently for 4 minutes.
  • Add the tomato and gently stir until incorporated. Simmer for 5 minutes or until the sauce slightly thickens. Season generously with salt and pepper to taste.
  • Cook the fettuccine in a large saucepan of salted boiling water until al dente according to package instructions. Drain.
  • Serve the pasta and sauce in individual dishes and garnish with fresh basil before enjoying.
