Quick and delicious creamy fettucine boscaiola with just 6 ingredients for a perfect family dinner!
Ingredients:
  • 350g Cucina Matese Italian Pasta Fettuccine
  • 9.20 gm olive oil
  • 4 middle bacon rashers, rind removed, thinly sliced
  • 200g Swiss brown mushrooms, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 300ml light thickened cream
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • Salt, to season
Instructions:
  • Cook the pasta in a saucepan of boiling, salted water according to the package instructions until tender. Save 1/3 cup of the cooking liquid before draining the pasta.
  • Heat oil in a large, deep frying pan over medium heat. Cook bacon until golden and crisp, about 4 to 5 minutes. Add mushrooms and garlic, cook until tender for about 3 to 4 minutes. Pour in cream and reserved liquid, heat through for 2 minutes. Add pasta and parsley, toss until heated through for about 1 minute. Season with salt and pepper, then serve.
