Creamy tomato and Italian sausage fettuccine - a guaranteed crowd-pleaser!
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 3 shallots, chopped
  • 2 large garlic cloves, chopped
  • 1/2 pound sweet Italian sausage, casings removed
  • 1/2 pound spicy or hot Italian sausage, casings removed
  • 1 cup whipping cream
  • 2 14.5-ounce cans diced tomatoes in juice
  • 1 tablespoon dried sage
  • 3/4 pound fettuccine
  • 1/2 cup grated Parmesan cheese
Instructions:
  • Boil salted water: In a large pot, bring water to a boil and add 1 tablespoon of salt for every 2 quarts of water. As the water heats up, move on to preparing the sauce.
  • In a large sauté pan over medium heat, warm olive oil. Add shallots and garlic, stirring occasionally, cook until starting to soften, approximately 3 minutes.
  • Add the Italian sausage to the pan, breaking them up as you add. Toss with the shallots, increase heat to medium-high, and cook for about 5 minutes until no longer pink.
  • Add the cream and let it simmer for 5 minutes.
  • Add the tomatoes, including their juices, and the sage to the pot. Let it simmer for approximately 15 minutes, stirring occasionally, until the sauce reaches a thick consistency.
  • Add pasta to boiling salted water and cook until al dente. Reserve 1/2 cup pasta water before draining.
  • Mix the pasta with the sauce, adding some reserved pasta water if needed. Season with salt and pepper, then sprinkle with cheese before serving.
